A Culinary Journey Through Tarpon Springs: From the Pappas Era to Today

Tarpon Springs has earned its reputation as one of Florida’s most distinctive food destinations, thanks in large part to its deep Greek roots. When sponge divers from Greece settled here in the early 1900s, they brought with them the flavors, traditions, and recipes that would shape the city’s restaurant culture for generations.

The Pappas Family Legacy

No story about Tarpon Springs dining is complete without mentioning Louis M. Pappas, a Greek immigrant from Sparta who opened Pappas Riverside Restaurant in 1925. His signature creation — the famous Greek salad crowned with a scoop of potato salad — became a culinary icon. Pappas first crafted the dish while serving in Gen. John J. Pershing’s army, and it eventually helped turn his restaurant into an internationally recognized landmark.
Historic photos from the 1940s show Louis and his son Michael preparing their celebrated Greek salad inside the bustling Riverside Café, a reminder of how influential the family became in shaping local cuisine.

In 1975, the Pappas family expanded their vision with a grand two‑story restaurant at the entrance of the Sponge Docks. Decades later, the building briefly reopened in 2010 as Riverside Grille House Veranda, complete with a rooftop terrace and nods to the Pappas heritage. Although the restaurant has since closed, the site remains an important piece of Tarpon Springs’ culinary history.

Greek Traditions, Modern Favorites

While the original Pappas restaurant is gone, the Greek spirit it helped popularize is alive and well. Today, Tarpon Springs is home to a vibrant mix of long‑standing and new Greek eateries, including:
